Ingredients:
About 1lb cubed pasture raised pork
1 medium zucchini
1 medium onion
1 ancho pepper
1 cup canned or fresh pineapple
Meat Marinade
1/4 cup soy sauce
2 Tbls Olive oil
2 Tbls Lime juice
1/2 tsp powdered ginger
1/2 tsp onion powder
1/4 tsp cumin
1/4 tsp pepper
Directions:
Combine marinade ingredients and add cubed pork. Mix well and refrigerate overnight or for at least 1 hour. Cut zucchini (and pineapple if using fresh) into cubes about the same size as the pork, cut onion, and ancho pepper. Using skewers assemble alternating between meat, fruit, and vegetables. Grill until pork is cooked through, enjoy!
